Over the holiday season I had a couple of family members visiting, so I decided to test out Ina’s Roast Chicken on them.  I can honestly say I have never had one of my meals devoured so fast.  It was crazy!  I thought they were going to chew on the bones.  Considering it was only two people eating the chicken I was surprised that they ate the whole thing.  This recipe was extremely easy to do.  I completed the meal with mashed potatoes, green beans, and sauteed fresh corn. 

I found the recipe was very accurate.  The chicken took the exact amount of time alloted.  I didn’t have to spend much time checking in on the chicken and had plenty of time to do the side dishes and dessert.  I definitely would suggest letting the chicken rest after it’s finished, it really made the chicken meat moist.  You could see all the moisture when you cut into the chicken breast.
