Chiffonade - Daily Definition

Filed under: Daily Definition — Nicky @ 10:33 am

So your recipe calls for a chiffonade of basil, what exactly is a chiffonade you ask?  Today’s daily definition comes courtesy of the Epicurious website.

Epicurious defines a chiffonade as:

chiffonade
[shihf-uh-NAHD, shihf-uh-NAYD]
Literally translated, this French phrase means “made of rags.” Culinarily, it refers to thin strips or shreds of vegetables (classically, sorrel and lettuce), either lightly sautéed or used raw to garnish soups.”
