My husband is a pizza fanatic, I mean really bad. He could eat pizza everyday, everyone teases him about it. So being a good sport I started making his pizza doughs and freezing them, so he could have pizza any time.Â
Here’s my favorite recipe for pizza dough - Hope you enjoy it!
- 1 cup warm water, divided
- 1 tsp. honey
- 1 packet or 2 1/4 tsps. of active dry yeast
- 3 tbls. olive oil, plus more to grease the bowl
- 2 1/2 cups of unbleached all purpose flour, plus 3/4 to 1 cup to add during dough making process
- 1/2 tsp. salt
- Place 1/4 cup warm water (80° to 100°F, be sure not to go to much over 100° or you can kill the yeast. You just want to activate the yeast, not kill it) in a small bowl. Add honey to the water and stir. Sprinkle the yeast over the water and let sit for 1 minute, then stir until blended. Let the stirred mixture sit for 10 minutes for the yeast to proof. After 10 minutes the water should look foamy, through away the mixture if it doesn’t, it means your yeast isn’t active.
- Pour the yeast mixture into the bowl of a stand mixer fitted with the dough hook. Add the remaining water and oil.
- Slowly add the flour in three divisons. After the first divison add the salt. (We add the salt here because salt can inhibit the growth of yeast)Add the final stages of flour. With the mixer on medium blend until a ball begins to form. Add the extra flour in small amounts (1/4 cup or less), just enough to keep the ball from sticking to the sides of the bowl. Depending on the time of year and conditions you may need anywhere from an extra 1/2 cup to 1 cup of flour to keep the dough ball from sticking. Let mix for 10 minutes.Â
- Dust your counter with flour. Take the dough ball out of the mixer and kneed a couple of time until it feels smooth.
- Take a large glass bowl or ceramic bowl drizzle with oil. Drop the dough ball into the greased bowl and flip over. (The oil keeps the dough from developing a crust) Cover the bowl with plastic wrap. Let the dough sit and rise for 1 1/2 hours in warm place.Â
- Punch dough down and divide into 2, and then make your pizza recipe. If you don’t want to use immediately the dough can be sectioned and placed in the fridge for a couple of hours or frozen.
